"Soil Health, Nutrient Density & Regenerative Agriculture in Greenwich Connecticut" - A Talk with Steve McMenamin of Versailles Farm

Steve and Ingrid McMenamin operate Versailles Farm, a 15-acre regenerative vegetable farm located in the backcountry of Greenwich Connecticut. Versailles Farms operates seasonally, selling directly to customers and a few area country clubs. Versailles Farm has become the largest producer of shitake mushrooms in CT and is increasingly focused on the production of high quality activated charcoal. Steve is a former finance executive, restaurant owner and and leader of the Greenwich Roundtable. He will address the role of soil health in vegetable and fungi production and its influence on human and environmental health.
