Celebrate peak dahlia season with an evening of creativity, beauty, and mindful design. In All Things Dahlias, students will explore the lush forms, colors, and character of these beloved early-fall blooms while learning how to construct a bountiful floral arrangement using sustainable, reusable techniques with inspiring, creative floral designer Dijana Xocoy of Toolbox Florals.

Joining Dijana is local flower farmer Rosann Berman of Rocky Ridge Farm, who will share her dahlia growing expertise: from planting and dividing to storing.

This workshop blends education and expert demonstration with hands-on creation, allowing participants to develop their own arranging style while gaining a deeper understanding of floral mechanics. Emphasis will be placed on eco-friendly design practices, including the use of chicken wire in place of floral foam, a technique favored by professional designers for its versatility and sustainability.

Perfect for flower lovers of all skill levels, this class offers a relaxed, inspiring environment to slow down, work thoughtfully with seasonal materials, and leave with a stunning dahlia arrangement to enjoy at home.

Bring the whole family to learn to make pickles! Using fresh cucumbers, beans, and garden herbs, we'll craft a flavorful jar of refrigerator pickles to take home and enjoy. All materials are provided in this fun, hands-on make-and-take program — no experience necessary!

Step into the fascinating world of fungi with naturopathic physician, herbalist, and mushroom educator Dr. Lindsay Chimileski. Together we'll explore the remarkable kingdom of fungi—from their unique biology and essential role in healthy ecosystems to the ways humans have celebrated mushrooms throughout history, folklore, food, and medicine.

We'll highlight some of Connecticut's most iconic autumn mushrooms, including maitake, lion's mane, chicken of the woods, oyster mushrooms, chanterelles, and more, exploring what makes each species unique, where they grow, and how to begin recognizing them in the landscape. Along the way, we'll discuss the nourishing and health-supportive qualities of medicinal and culinary mushrooms, with simple ideas for incorporating them into everyday meals and wellness routines.

Whether you're spotting your very first mushroom or already find yourself slowing down to admire every log and stump, you'll leave with a richer understanding of the fungal world, fresh perspectives, and plenty of fascinating stories, practical knowledge, and fun facts to inspire your next walk in the woods. We'll conclude with a guided walk around the Greenwich Botanical Center grounds to observe seasonal fungi in their natural habitats and discover the hidden kingdom growing all around us.

Dr. Lindsay Chimileski, ND, MS, RH(AHG) is a Connecticut-licensed naturopathic doctor, acupuncture specialist, and registered herbalist with over a decade of clinical experience. She weaves together evidence-based naturopathic medicine, plant and mushroom wisdom, and heart-centered healing to help people reconnect with their innate resilience. She founded Hawthorn Holistic Health in 2017, a family-medicine natural health clinic serving patients of all ages. A former botanical medicine professor for seven years, she now teaches through conferences, community events, and small-group programs. She is known for her grounded teaching style, deep connection to the earth, and ability to make herbal traditions accessible and inspiring. At the Greenwich Botanical Center, Dr. Lindsay shares her passion for local plants, seasonal wellness, and nature-based practices that support whole-body vitality.

Please note this event will conclude with a walk around the Montgomery Pinetum.  Please wear comfortable, sturdy shoes and be prepared to be outdoors.

Learn how to dig and store your dahlia tubers from the experts at Greenwich Dahlia Society.  They will discuss the variety of methods that people use for the best results.   This is a meeting of the Greenwich Dahlia Society that is open to all; the format is an informal sharing of knowledge and information. Registrations go to support the operations of Greenwich Dahlia Society.

With the summer behind us and winter on the horizon, fall is a great time to take steps to prepare your vegetable garden for next spring to ensure even greater success next year. Tiana Santasiere, horticultural education director, will be discussing how to properly put your vegetable garden to bed for winter. She will cover the final harvest of crops and disposal of plant debris, in addition to final garden tasks and strategies on how to prepare your soil for spring by adding amendments and planting cover crops.

Cost includes instruction and handouts.

10AM-12PM: Principles of native landscape design throughout the seasons
12-1PM: One-hour Walk in Pinetum to identify and discuss native plants

With a little bit of planning, your garden can look beautiful in all seasons, even after the flowers fade.  Instructor Kim Eierman will introduce you to a variety of native plants that will extend the color show and textural interest in your garden through fall and winter, with beautiful foliage, striking structure, colorful branches, berries, and seed pods.  Beyond extending the aesthetic interest in your landscape, learn how you can boost ecological value for wildlife through four seasons.

The talk will be followed by a one-hour walk on GBC grounds to identify and discuss the native plants found there. 

About Kim Eierman:
Kim Eierman is the Founder of EcoBeneficial LLC and the author of  The Pollinator Victory Garden: Win the War on Pollinator Decline with Ecological Gardening. She is an ecological landscape designer and environmental horticulturist specializing in native plants.  Based in New York, Kim teaches at the New York Botanical Garden, Brooklyn Botanic Garden, The Native Plant Center and Massachusetts Horticultural Society. In addition to being a Certified Horticulturist through the American Society for Horticultural Science, Kim is an Accredited Organic Landcare Professional, a Steering Committee member of The Native Plant Center, and a member of The Ecological Landscape Alliance and Garden Communicators International.
